Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon cinnamon
- 1/2 teaspoon kosher salt
- 1 cup chopped, toasted pecans
- Demerara sugar, for rolling the dough balls in
Instructions:
- Preheat the oven to 350° F.
- Chop a cup of pecans and spread evenly onto a baking sheet. Put the baking sheet into the preheated oven for 6 minutes, shaking the pan lightly to toss the pecans halfway through.
- Cream the butter, sugar, and vanilla extract together in the bowl of a stand mixer.
- Add the flour, cinnamon and salt to the bowl and mix on a low speed until incorporated. Be careful not to over-mix.
- Pour in the chopped, toasted pecans, and mix on low until just combined.
- Form dough into balls. The dough will be crumbly so press it firmly; this will help achieve a perfect crumbly texture.
- Place the dough balls on a lined baking sheet, and bake for 17 minutes.
- Let cool and enjoy.
